In 2015, after years in the corporate world, Carsten shifted gears and immersed himself in Denmark’s thriving organic agriculture scene.
His perspective transformed during his first days on the farm. ‘I wasn’t initially passionate about organic living,‘ he admits. ‘But when I saw how technology and nature intertwined, like plants generating music through sensors, it completely changed my understanding of sustainable farming.’
That revelation sparked a deep appreciation for organic food and its scientific foundations. Over the next six years, Carsten helped build a successful organic meal box service, honing his expertise in regenerative farming, composting, and the health benefits of organic produce.
A New Chapter in Spain
In 2022, Carsten relocated to Spain, drawn by its culture and sunny climate. However, he quickly noticed a gap in the market: high-quality, affordable organic food was scarce. ‘In Denmark, over 30% of food sold is organic,’ he explains. ‘Here, it’s either hard to find or prohibitively expensive.’ Many small farms prioritized exports over local sales, leaving health-conscious consumers with limited options.
Determined to make a difference, Carsten launched Organic To Go in early 2025. His vision? To bridge the gap between local farms and consumers while promoting sustainable eating. Partnering with nearby organic producers ensures the freshest ingredients, and collaborating with longevity chef Louise Rakers adds culinary expertise to the mix.
